These quick and simple pan-fried noodles are made with just a few ingredients in one pan, making them an ideal addition to your dinner routine. Coated in a savory sauce and mixed with aromatic vegetables, these stir-fried noodles are full of flavor and can be easily customized to suit your preferences.

INGREDIENTS

  • 300 g fresh noodles (see notes below)
  • 2 tbsp neutral oil
  • 2 cloves garlic, minced
  • 2 green onions, cut into 2″ pieces lengthwise
  • 1 cup bean sprouts (or other vegetables of choice)
  • 1 tsp sesame oil (for finishing)

Sauce

  • 2 tbsp soy sauce
  • 1/2 tbsp dark soy sauce
  • 1/2 tbsp sugar
  • 1/8 tsp white or black pepper
  • 1 tbsp water

INSTRUCTIONS

  • Mix together the sauce ingredients in a bowl. Prepare the noodles according to the package instructions. Rinse them under cold water, drain, and set aside.
  • Heat the oil in a wok or large pan over medium heat. Add the garlic and the white parts of the green onions and cook until fragrant.
  • Add the noodles to the pan and stir to combine.
  • Pour in the sauce and cook for 2-3 minutes, allowing the noodles to caramelize.
  • Add the bean sprouts, reserved green onions, and finish with sesame oil. Toss everything together and enjoy!

NOTES

  • For the best texture and a quicker process, use fresh pre-cooked noodles. If you’re using dried noodles, you can still get great results.
  • Options like Hong Kong-style fried noodles, Shanghai noodles, chow mein, or egg noodles are excellent choices, but feel free to use udon, ramen, or yakisoba noodles.
  • To prepare fresh noodles quickly, simply blanch them in boiling or hot tap water. Once loosened, rinse under cold water, drain, and they’re ready to use in your stir fry.

Happy cooking!
