With just a few ingredients, these rolls are not only keto-friendly but also gluten-free, nut-free (no almond or coconut flour here), and can be ready in just 35 minutes.
GARLIC BREAD MADE WITHOUT ALMOND FLOUR OR COCONUT FLOUR
These bread rounds are crafted with a fathead dough that omits almond flour, instead using ground sunflower seed meal for a nut-free and coconut-free alternative. This nut-free flour is a staple in my kitchen and a great option for those avoiding almond flour in their keto cooking.
If you’re interested in more ways to use ground sunflower seed meal, I have plenty of nut-free, keto-friendly recipes that showcase this versatile ingredient!
Pair these bread rounds with hearty dishes such as cheesy baked spaghetti, easy pasta puttanesca, smoked mac and cheese, or Velveeta broccoli casserole for a satisfying meal.
RECIPE FAQS FOR NUT-FREE KETO GARLIC BREAD ROLLS
WHAT INGREDIENT SUBSTITUTION OPTIONS ARE THERE?
Ground Sunflower Seed Meal: To make your own ground sunflower seed meal, simply pulse raw sunflower seeds in a blender or food processor until they reach a flour-like consistency. Be careful not to over-blend, as this will turn the seeds into sunflower seed butter (similar to peanut butter). If you can use nuts, almond flour is a suitable substitute in a 1:1 ratio.
Gluten-Free Baking Powder: If you need to replace the gluten-free baking powder in this recipe, you can create your own blend at home using baking soda and cream of tartar. For the 2 teaspoons of baking powder required, use 1/2 teaspoon of baking soda and 1 teaspoon of cream of tartar. Cream of tartar is usually available in the spice section of most grocery stores. This substitution will also make your recipe grain-free.
WHERE CAN I PURCHASE GROUND SUNFLOWER SEED MEAL?
I purchase my ground sunflower seed meal from Amazon (this is the exact brand I use), but you can also make your own at home by grinding raw sunflower seeds in a food processor until they achieve a flour-like consistency.
HOW TO ENSURE THE GARLIC BREADS ARE ROUND?
Chill the dough in the refrigerator for about 15 minutes before placing it on your baking sheet. While this step isn’t required by the recipe, it can help ensure that your dough balls come out more rounded if that’s the look you’re aiming for.

HOW SHOULD THEY BE STORED AFTER BAKING?
These garlic breads are best enjoyed fresh from the oven while they’re hot, but they can also be stored for later use.
Refrigerator Storage: Keep them in an airtight container for up to 2 days. The texture may change slightly after storage, but they will still taste delicious!
Reheating Instructions: To reheat, place them in the oven at 400 degrees Fahrenheit until warmed through, about 8-10 minutes, depending on how cold they were from the refrigerator.
HOW TO MAKE THESE NUT-FREE KETO GARLIC BREAD ROUNDS
Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
Garlic Bread Rounds: In a microwave-safe bowl, combine shredded mozzarella and cream cheese.
Transfer the bowl to the microwave and heat on high for 1 minute. Remove the bowl and stir with a rubber spatula. Return the bowl to the microwave and heat for an additional 30 seconds, then stir again.
Whisk together the dry ingredients, then add them to the bowl with the melted mozzarella and cream cheese. Mix using a fork or your hands until well combined. Add the egg and continue mixing with a fork or your hands until a dough forms.
To prevent the dough from sticking, wet your hands with water frequently while shaping the dough into 6 equal-sized balls. Place each ball on the prepared baking sheet. Bake in the oven until the bread is golden brown on top, about 12-15 minutes.
Parsley Garlic Butter: While the bread is baking, prepare the garlic butter. Melt the butter in a pan over medium heat. Once melted, add the garlic and cook until fragrant, about 30 seconds.
Remove the pan from the heat and stir in the chopped parsley.
Final Steps: Brush the garlic butter over the baked bread and serve.
