EQUIPMENT
- Large (11-inch/28cm) non-stick skillet
- 7×12-inch casserole pan (20x32cm) or baking tray
INGREDIENTS
- 1.1 lb (500g) ground turkey (thighs, breast, or a mix of both)
- 7 oz (200g) finely chopped champignon or baby bella mushrooms
- 1 small (50g) finely chopped yellow onion
- 2 cloves garlic, pressed or minced
- 1 large egg
- 3 tablespoons almond flour
- Salt, to taste
- Ground black pepper, to taste
- Olive oil, for frying
- Fresh parsley, chopped (for garnish)
FOR THE GLAZE
- ⅓ cup 80g ketchup unsweetened
- 1 tablespoon Worcestershire sauce
- 1 teaspoon chipotle paste optional
- Salt to taste
INSTRUCTIONS
Step 1: Heat olive oil in a non-stick skillet over medium-high heat. Once hot, add the onions and garlic, cooking until golden. Next, add the mushrooms, season with salt and pepper, and cook until tender and beginning to brown, about 10 minutes. Transfer to a plate and let cool for 5 minutes.
Step 2: Preheat the oven to 200°C (390°F).
Step 3: In a large mixing bowl, combine the cooled mushroom mixture, egg, almond flour, and additional salt and pepper to taste. Mix thoroughly with your hands until well combined.
Step 4: Transfer the meat mixture to a baking dish and shape it into a meatloaf using your hands. Bake, uncovered, for 40 minutes.
Step 5: While the meatloaf bakes, mix ketchup, Worcestershire sauce, and chipotle paste (if using) in a small bowl.
Step 6: After 40 minutes, remove the meatloaf from the oven and spread the glaze evenly over the top. Return to the oven and bake for an additional 10 minutes, or until the internal temperature reaches 175°F (79°C).
Step 7: Let the meatloaf rest for 10-15 minutes before slicing and serving.
