INGREDIENTS
- 2 servings (500g) udon noodles (preferably frozen)
- 3 tbsp butter
- 4 cloves garlic, minced
- 1/2 medium onion, sliced
- 200g mushrooms of your choice (shiitake and golden enoki work well)
- 1 tbsp oyster sauce or soy sauce
- 1 cup heavy cream or evaporated milk
- 2 tbsp miso paste (white or red)
- Green onion, furikake, egg, and/or shredded nori for garnish
INSTRUCTIONS
- To prepare the frozen udon noodles, soak them in hot water for about a minute. Use chopsticks to gently loosen the noodles, then rinse with cold water, drain, and set aside.
- In a pan over medium heat, melt the butter until bubbling. Add the sliced onion and minced garlic, cooking for about 2 minutes or until fragrant. Stir in the mushrooms.
- Add 2-3 tablespoons of water and the oyster sauce to the pan, sautéing for a few minutes until the mushrooms are cooked through.
- Pour in the heavy cream and stir in the miso paste, mixing until combined. Bring the sauce to a boil, then add the noodles, tossing to coat evenly. Season with salt and pepper to taste, garnish as desired, and enjoy!
NOTES
For a Brothier Dish: Add 1/4 cup of chicken stock (or more) along with the heavy cream to achieve a thinner sauce. Adjust the consistency to your preference!
Frozen Udon Noodles: These are recommended for their long shelf life and ideal texture for stir-fries. They tend to remain chewy and are less likely to become mushy when cooked.
Miso Paste: Both white and red miso can be used, yielding slightly different flavors. For a milder, slightly sweet taste, opt for white miso (shiro miso). If you prefer a stronger flavor, choose red miso.
