INGREDIENTS
- 3 lbs frozen peaches
- 1 cup granulated sugar
- 1 cup brown sugar
- ½ cup butter
- 1 tsp lemon juice
- 1½ tsps vanilla extract
- ⅛ tsp nutmeg
- 1 tsp cinnamon
- 1 box rolled pie crust
DIRECTIONS
- Preheat the oven to 350°F (175°C).
- Prepare the crust: Roll out one of the pie crusts and place it in the bottom of a baking dish. Sprinkle with cinnamon and sugar, then lightly rub it into the crust.
- Pre-bake the crust: Place the dish in the preheated oven and bake for 10 minutes. Remove and set aside.
- Cook the peaches: In a large saucepan, melt the butter over medium heat. Add the frozen peaches and simmer for 5 minutes.
- Add flavor: Stir in the lemon juice, vanilla extract, granulated sugar, brown sugar, cinnamon, and nutmeg. Simmer for another 10 minutes, stirring frequently.
- Assemble the cobbler: Pour the peach mixture into the baking dish. Lay strips of the remaining pie crust over the peaches.
