INGREDIENTS
- 2 boneless, skinless chicken breasts
- 5 strips of bacon
- 3 jalapeños
- 1/2 cup mayonnaise
- 1/4 cup green onions, chopped
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1 tbsp avocado oil
INSTRUCTIONS
- Cook the Chicken: Place the chicken breasts in a medium saucepan and cover them with cold water, ensuring there’s at least 1 inch of water above the chicken. Bring the water to a boil over medium heat, then reduce to a simmer and cover. Cook for 14 minutes, then remove from heat.
- Prepare the Bacon: While the chicken cooks, fry the bacon in a skillet over medium-low heat until crispy. Remove and place on a paper towel to drain excess grease, then chop into bite-sized pieces.
- Prepare the Jalapeños: Deseed and slice the jalapeños into small strips. If you prefer a spicier salad, leave some seeds intact. In a frying pan, heat 1 tbsp of avocado oil over medium heat. Sauté the jalapeños until soft, about 10 minutes. Add 1/2 tsp of salt and sauté for another minute.
- Mix the Dressing: In a small bowl, combine the mayonnaise, chopped green onions, onion powder, and garlic powder.
- Shred the Chicken: Once the chicken is cooked, remove it from the water and shred it using two forks on a plate or cutting board.
- Combine: In a large bowl, mix the shredded chicken, mayonnaise mixture, sautéed jalapeños, and chopped bacon until well combined.
- Serve or Store: Enjoy immediately or store in an airtight container in the refrigerator for up to 4 days.
Recipe Notes
- For Whole30 compliance, ensure your bacon and mayonnaise are Whole30 approved.
