INGREDIENTS
- 5-6 lbs frozen tomatoes
- 1 teaspoon salt
- 1 tablespoon oregano
- 1 teaspoon paprika
- 5-6 cloves garlic, minced
INSTRUCTIONS
- Prepare the Tomatoes:
- Place the frozen tomatoes into a 5-quart stockpot, removing any stems as needed.
- Cover the pot with a lid and set the heat to medium on the stovetop.
- Cook the Tomatoes:
- Let the tomatoes cook for about 30 minutes, or until they become soft and begin to sag. Stir occasionally to ensure they cook evenly.
- Cool and Blend:
- Once the tomatoes are softened, remove the pot from heat and allow it to cool until it’s safe to handle.
- Ladle the tomatoes and juices into a blender, filling it up to about half or two-thirds of the way.
- Secure the lid on the blender, and cover it with a pot holder or tea towel to prevent splatters.
- Blend the tomatoes for about 30 seconds, or until the skins are no longer visible in the mixture.
- Continue Blending:
- Pour the pureed tomato mixture into a 4-quart stockpot and continue blending the remaining tomatoes until all are pureed.
- Simmer the Sauce:
- Bring the pureed tomatoes to a rolling boil in the 4-quart pot. Once boiling, reduce the heat to allow the sauce to simmer gently.
- Let the sauce simmer for about an hour, stirring frequently, to thicken and reduce to your desired consistency.
- Season the Sauce:
- Once the sauce has thickened, add the minced garlic, salt, paprika, and oregano. Stir well to combine.
- Simmer for an additional 5-7 minutes, until the garlic softens and the flavors meld together.
- Use or Store:
- You can use the sauce immediately, or preserve it by canning or freezing for later use.
