Ingredients

  • 1 tsp coconut oil (or butter)
  • ⅓ cup low-fat cottage cheese
  • ½ cup rolled oats (no need to pre-cook)
  • 2 eggs
  • Salt, to taste

Instructions

  • In a bowl or blender, combine all ingredients and whisk or blend until smooth.
  • Heat the coconut oil (or butter) in a pan over low to medium heat.
  • Pour the batter into the pan and cook, flipping once bubbles start to form. Continue cooking until both sides are golden brown.
  • Serve and enjoy!
