ABOUT THIS RECIPE

I’m a huge Nutella fan, and I’ve found my new favorite way to enjoy it: Nutella mochi! These treats are filled with chocolate hazelnut spread and encased in soft, chewy homemade mochi.

They’re surprisingly easy to make and absolutely delicious! After my first attempt, where I made quite a mess with chocolate everywhere, I discovered a handy tip: freeze the Nutella before wrapping it. This makes the filling firmer and easier to handle. I use a piping bag or a ziplock bag with a hole cut in the corner to portion out small blobs of Nutella on a baking sheet.

For the dough, I recommend using just water, glutinous rice flour, and sugar. This combination results in an incredibly chewy texture with a pleasantly neutral flavor. Enjoy!

HOW TO MAKE

INGREDIENTS

  • ½ cup Nutella
  • 1 cup glutinous rice flour (or mochiko flour)
  • 1 cup water
  • ¼ cup sugar
  • ⅓ cup cornstarch (for dusting)

INSTRUCTIONS

  • Prepare the Nutella: Use a spoon or a piping bag to drop 10 small blobs of Nutella onto a baking sheet lined with parchment paper. Freeze for 20 to 30 minutes to firm them up, making them easier to handle later.
  • Make the Mochi Dough: In a microwave-safe bowl, combine the glutinous rice flour and sugar. Whisk in the water until the mixture is smooth. Cover the bowl with a damp paper towel and microwave for 1 minute. Stir with a spatula and repeat this process two to three times until the mixture becomes sticky and translucent. Allow it to cool for 5 to 10 minutes.
  • Shape the Mochi: Dust a clean work surface with cornstarch. Transfer the mochi dough to the surface, dust it with more cornstarch, and roll it out into a thin layer about ¼-inch thick. Cut the dough into ten equal portions.
  • Fill the Mochi: Place a frozen Nutella blob in the center of each mochi portion. Fold the sides of the dough over the Nutella to enclose it, pinching the edges to seal. Dust lightly with cornstarch and brush off any excess. Place each mochi seam-side down and repeat with the remaining dough and Nutella.
  • Enjoy: Serve your delicious Nutella mochi right away!

Notes:

Storage: Store any leftover mochi in an airtight container in the refrigerator for up to two days. After that, the mochi may dry out.
