  • ½ tablespoon olive oil
  • 2 cups spinach leaves (113 g / 1.4 lb)
  • Pinch of salt

  • ½ cup crumbled feta cheese
  • ¼ cup shredded cheddar (or mozzarella) cheese
  • Pinch of oregano
  • Pinch of crushed chili flakes

INSTRUCTIONS

  • Sauté Spinach: Heat olive oil in a non-stick pan. Add spinach and sauté for 5-6 minutes until wilted. Season with salt, stir, and transfer to a plate. Wipe the pan clean with a paper towel.
  • Prepare Bread: Spread butter on one side of each slice of bread. Place two slices in the pan, butter side down.
