This Jalapeño Popper Chicken Salad is a quick, delicious, and Whole30-friendly lunch option you can prepare in advance and enjoy throughout the week. Savor the taste of jalapeño poppers in a simple salad that’s perfect for lunch!

INGREDIENTS

  • 2 boneless, skinless chicken breasts
  • 5 strips of bacon
  • 3 jalapeños
  • 1/2 cup mayonnaise
  • 1/4 cup green onions, chopped
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 tbsp avocado oil

INSTRUCTIONS

  • Cook the Chicken: Place the chicken breasts in a medium saucepan and cover them with cold water, ensuring there’s at least 1 inch of water above the chicken. Bring the water to a boil over medium heat, then reduce to a simmer and cover. Cook for 14 minutes, then remove from heat.
  • Prepare the Bacon: While the chicken cooks, fry the bacon in a skillet over medium-low heat until crispy. Remove and place on a paper towel to drain excess grease, then chop into bite-sized pieces.
  • Prepare the Jalapeños: Deseed and slice the jalapeños into small strips. If you prefer a spicier salad, leave some seeds intact. In a frying pan, heat 1 tbsp of avocado oil over medium heat. Sauté the jalapeños until soft, about 10 minutes. Add 1/2 tsp of salt and sauté for another minute.
  • Mix the Dressing: In a small bowl, combine the mayonnaise, chopped green onions, onion powder, and garlic powder.
  • Shred the Chicken: Once the chicken is cooked, remove it from the water and shred it using two forks on a plate or cutting board.
  • Combine: In a large bowl, mix the shredded chicken, mayonnaise mixture, sautéed jalapeños, and chopped bacon until well combined.
  • Serve or Store: Enjoy immediately or store in an airtight container in the refrigerator for up to 4 days.
