When making this keto white chicken enchiladas recipe, it’s important to use low-carb tortillas. You can always make homemade tortillas, but if you’re looking for store-bought low-carb options, there are plenty to choose from. HOW TO MAKE LOW CARB WHITE CHICKEN ENCHILADAS

Ingredients:

  • 2 cups cooked chicken
  • 2.5 cups shredded Monterey Jack or Pepper Jack cheese
  • 5 ounces cream cheese
  • 2 teaspoons garlic powder
  • 3 tablespoons butter
  • 2 tablespoons almond flour
  • 1 tablespoon taco seasoning
  • 2 cups chicken broth
  • 1 cup sour cream
  • 4 ounces canned diced green chilies
  • 10 low-carb flour tortillas

Instructions:

  • Cook the chicken using your preferred method—boil, bake, or use rotisserie chicken.
  • Preheat the oven to 350°F and grease a 9×13-inch baking dish.
  • Shred the cooked chicken with a fork if needed, then place it in a bowl. Add 3/4 cup of shredded Monterey Jack (or Pepper Jack) cheese, garlic powder, and cream cheese. Mix everything until well combined.
  • In a saucepan, melt the butter. Stir in the almond flour and taco seasoning, cooking for 1 minute. Slowly whisk in the chicken broth until smooth. Add 1/2 cup of shredded cheese and cook over medium heat until the sauce thickens and becomes bubbly.
  • Stir in the sour cream and diced green chilies. Be careful not to let the mixture boil. Remove from heat.
  • Fill each tortilla with the chicken and cheese mixture, roll them up, and place them seam-side down in the prepared baking dish.
  • Pour the sauce evenly over the enchiladas, then top with the remaining cheese.
  • Bake for 22 minutes, then broil on high for 3 minutes to brown the cheese.
