IS CABBAGE CASSEROLE HEALTHY?
Absolutely! This hearty casserole is packed with nutritious veggies and lean protein. Cabbage has long been a powerhouse food, even before the term “superfood” was coined. For those avoiding beef, ground turkey or chicken can be excellent alternatives.
I included an orange bell pepper in the recipe to enhance both flavor and color. If you’re adhering to a strict low-carb diet, you can skip the orange pepper. This adjustment will reduce the total carbs by about 9 grams, or 6 net carbs.
One cup of raw cabbage has around 22 calories, 5 grams of carbs, and 2 grams of fiber, totaling 3 net carbs.
INGREDIENTS
- 3 Tablespoons Oil
- 1 Lb Ground Beef
- 1 Sweet Onion, (chopped)
- 1 Orange Bell Pepper, (seeded, chopped)
- 3 Garlic Cloves, (chopped)
- 14 oz Can Fire Roasted Diced Tomatoes
- 1/2 teaspoon Smoked Paprika
- 1/2 teaspoon Dried Oregano
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- Salt/Pepper, (to taste)
- 1 Small Head Green Cabbage, (cored, chopped)
- 2 Cups Shredded Cheddar/Jack Cheese
INSTRUCTIONS
- Heat oil in a large pan or Dutch oven over medium-high heat. Add the beef, onion, and orange pepper, cooking until the beef is browned and the onions are translucent.
- Add the garlic and sauté for an additional minute.
- Stir in the tomatoes, spices, salt, and pepper. Layer the cabbage on top. Cover and cook for 15-20 minutes, or until the cabbage is tender.
- Sprinkle with cheese, cover until melted, then serve.
