This egg-free meatloaf recipe is quick and easy to prepare, requiring just four ingredients. It comes together in minutes and is ready to bake in no time.
INGREDIENTS
- 1/4 cup cheddar cracker crumbs (or coarse breadcrumbs)
- 1/4 cup ketchup, divided
- 1 tablespoon water
- 1/4 teaspoon salt
- 1/8 teaspoon finely ground black pepper
- 1 pound lean ground beef
INSTRUCTIONS
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the cheddar cracker crumbs, 2 tablespoons of ketchup, water, salt, and black pepper. Mix well with a fork until a chunky paste forms.
- Add the ground beef to the mixture and combine thoroughly, ensuring the paste is evenly mixed throughout.
- Transfer the mixture into a prepared baking dish, pressing it down to make an even layer. Brush the remaining ketchup over the top.
- Bake for 40 minutes, or until the internal temperature reaches at least 160°F (71°C). Remove from the oven, let it cool for 5 minutes, then slice and serve.
Recipe Notes
- If you don’t have cheddar crackers, you can substitute with an equal amount of seasoned breadcrumbs.
- For baking, a 1-quart baking dish is ideal, but you can also use a bread loaf pan or an 8×8 square pan as alternatives.
