I’ll admit, summer isn’t my favorite season—primarily because of the heat. However, one thing I do enjoy about it is the refreshing, light recipes that come with the season. One of my absolute favorites is pickled mozzarella. It’s incredibly easy to make, bursting with flavor, and makes the perfect side dish for a barbecue or picnic.
INGREDIENTS
- 3 packs of mini mozzarella (125g each)
- 2 cloves of garlic
- 4 dried tomatoes in oil, marinated
- 1 teaspoon each of thyme, oregano, and chili flakes
- ½ bunch each of parsley and basil
- 200 ml olive oil
- Zest of 1 lemon
- Salt to taste
INSTRUCTIONS
- Wash the lemon with hot water, then grate the zest.
- Peel and crush the garlic cloves.
- Chop the dried tomatoes.
- Finely chop the parsley and basil.
- Drain the mozzarella and place it in a tall jar or container.
- Add the remaining ingredients and mix everything together gently.
- Let it marinate for at least 2 hours before serving.
