Taco egg rolls are a delicious and innovative fusion dish that combines the flavors of Mexican tacos with the crispy texture of Chinese egg rolls. EQUIPMENT

  • Large skillet
  • Air fryer

INGREDIENTS

  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • ¼ cup salsa
  • 2 cups shredded Mexican cheese blend
  • 15 egg roll wrappers
  • Guacamole, salsa, or queso for dipping

INSTRUCTIONS

  • In a large skillet over medium heat, add the ground beef, crumbling it as it cooks. Cook until fully browned, then drain any excess fat and return the beef to the skillet.
  • Stir in the taco seasoning and salsa, along with 2 tablespoons of water. Cook for a few minutes, stirring frequently, until most of the liquid has evaporated.
  • Remove the skillet from the heat and mix in the shredded cheese until melted and well combined.
  • Place about ¼ cup of the beef mixture into the center of each egg roll wrapper. Fold in the sides, then roll tightly. Before sealing the last edge, dampen it with water using your finger, then finish rolling to seal the egg roll. Repeat this process for all wrappers.
  • Lightly spritz the egg rolls with oil spray on both sides.
  • Arrange the egg rolls in a single layer in the air fryer basket, leaving space between each for proper air circulation. You may need to work in batches, depending on the size of your air fryer.
  • Cook at 390°F (200°C) for 7 minutes, or until golden brown, flipping halfway through cooking.

Notes: Serve hot with guacamole, salsa, or queso for dipping. Enjoy!

RECIPE TIPS AND SUBSTITUTIONS

You can substitute the beef with ground turkey, ground chicken, or seasoned shredded chicken. Just make sure to use a pound of your chosen option to yield the same number of egg rolls as the recipe specifies. Additionally, Ro-tel is an excellent alternative to salsa!
